PKNU pioneers the ‘blue food’ industry through research on marine-based substitutes
- selected for Busan techno park r&d project
Pukyong National University (President Jang Young-Soo) is set to contribute to the future 'blue food' industry by promoting research on production technology for marine product-based meat substitute and clean meat.
Pukyong National University announced on april 24 that the research team led by professor Kim Young-Mok (major of food science & technology) was selected for the project of 'field-oriented R&D technology development support project for innovative growth of the seafood industry' hosted by Busan techno park.
As a sustainable food, ‘blue food’, which refers to food derived from aquatic products, is considered a valuable industry for the future. Particularly, with the recent rapid growth of the substitutional food market, interest in the development of marine product-based substitutes is growing.
As selected for this project, the research team plans to promote the development of fish substitute protein and source technology for cultured fish cake to transform the local seafood industry into a future high value-added industry. It is to study the original technology required to make food by extracting proteins from micro algae or seaweed, or to make fish meat by culturing cells taken from fish.
Accordingly, the research team aims to preemptively respond to the new market for alternative foods and develop basic technologies for local processed seafood based on ‘blue food-tech’, they research on the development of alternative fish protein materials, development of source technology for cultured fish meat, development of future high value-added seafood products using alternative fish protein and active packaging development for future high value-added seafood distribution technology development.
Led by professor Kim Young-Mok, the research director, Pukyong National University Marine-integrated biomedical technology center (director Jung Won-Kyo) and the Food research institute (director Yang Ji-Young), which are key research institutes of the university, participated in this convergence research with professor Shim Kil-Bo (major of food science & technology), professor Lee Sang-Gil (major of food science & nutrition), and professor Gong Seung-Pyo (major in aquaculture and applied life sciences) of the same university participating as co-researchers.
Professor Kim Young-ok said, "Taking this research as the first step to transform the local marine product industry into a future regional-based industry, we will do our best to contribute to building a regionally oriented R&D infrastructure, such as securing regionally oriented technology and competitiveness through linkages with the industry." <Pukyong Today>
